Production Area: Viverone, province of Biella, Piverone, province of Turin (Piedmont)
Altitude: 250 / 300 meters ASL
Soil / Exposure: Southern side of the Serra Morenica of Ivrea sloping towards the lake of Viverone, characterized by excellent exposure and acid reaction soil
Implant System: Pergola canavesana
Grape Harvest: Last decade of September, the best grapes are selected and put to dry on raisin drying racks until mid-February

Vinification and Aging: After having pressed the grapes with careful selection we proceed with the vinification. Fermentation at controlled temperatures in stainless steel tanks; once the vinification is finished, the wine is aged in barriques for at least 36 months and then bottled
Alcohol: 14% ABV
Service Temperature: 12-14 degrees

Sensory characteristics and pairings: 

Sight: Intense golden yellow with amber highlights
Smell: Very intense and definitely complex, dates, honey, figs and spicy nuances of vanilla and cinnamon
Taste: Pleasant and soft entrance with a remarkable structure and a never-cloying drinking, supported by a softened but still vibrant acidity and a long and savory finish

Shortcrust pastry cakes, pies, dried – traditional or not – pastry are its ideal companions. Curious the combination with white chocolate, perfect with blue cheeses


ARDOREM” Erbaluce di Caluso Passito DOCG

The oldest and most famous version of Erbaluce, a grape variety already known in Roman times as “Alba Lux”. After a rigorous selection during the harvest, the grapes are left to dry until winter: the process, still completely artisanal, and the excellent quality make the Passito the pride of the denomination.
