Altitude: 250 / 300 meters ASL
Soil / Exposure: Southern side of the Serra Morenica of Ivrea sloping towards the lake of Viverone, characterized by excellent exposure and acid reaction soil
Implant System: Pergola canavesana
Grape Harvest: Last decade of September; strictly hand-picked in boxes to the cellar

Vinification and Aging: Alcoholic fermentation in stainless steel tanks at controlled temperature, followed by malolactic fermentation in steel and refinement in bottle for about 3 months

Alcohol: 13.5% ABV
Service temperature: 16-18 degrees

Sensory characteristics and pairings:
Sight:Pleasant, intense, ruby red
Smell: Intense and complex bouquet with notes of violet, cherry, blackcurrant, black pepper and graphite
Taste: Rustic red wine, slightly tannic and medium-bodied, balanced by pleasant freshness and savory with good persistence

Ideal with hors d’oeuvres based on cold cuts and traditional Canavese cheeses, first courses with meat sauces and stuffed pasta. Excellent paired with grilled red meats.
