Soil / Exposure: Southern side of the Serra Morenica of Ivrea sloping towards the lake of Viverone, characterized by excellent exposure and acid reaction soil
Implant system: Pergola canavesana
Grape harvest: Last decade of September, strictly hand-picked in boxes to the cellar

Vinification and aging: Cryomaceration at 4°C for 48 hours to extract the aromatic potential of the grapes; fermentation in stainless steel tanks at controlled temperature (14°C), 6-month permanence on fine lees and bottle aging for another 6 months before commerce

Alcohol: 13% ABV
Service temperature: 8-10 degrees

Sensory characteristics and pairings:
Sight: Pleasant straw yellow of perfect transparency with shades of green that gradually become golden in bottles with two/three years of aging

Smell:  Elegant, complex and intense bouquet composed by notes of pineapple, grapefruit, green apple, jasmine, acacia flowers, sage leaf and a distinct mineral hint
Taste: Elegant and with a good overall structure, freshness and savory in correctness, ending with a long and persistent almond hint

Ideal for seafood and earthfood hors d’oeuvres, excellent with vegetable soups and delicate magro or fish first courses. Worth mentioning the typical regional combination: dishes based on Coregone whitefish from the Lake of Viverone.


This wine is dedicated to the Cella di San Michele, an ancient chapel of the XI century which is also an integral part of the farm and the cellar. It is ideal to capture the characteristics and nuances of the unique terroir of the Serra through the most important and ancient native grape variety of Canavese: Erbaluce.
