Grape Harvest: Slightly earlier than the full ripening of the grapes
Vinification and Aging: Sparkling process with refermentation in autoclave according to Martinotti Method, 6-month permanence on the yeasts of the base wine, from 2 to 6 months after the foaming
Alcohol: 12% ABV

Sight: Bright-straw yellow color with light green reflections, enhanced by fine perlage
Smell: Straightforward and fine with pleasant notes of crunchy fruit and jasmine flowers
Taste: Dry, fresh and savory with great drinkability
Recommended as an aperitif or accompanied by seafood and earthfood hors d’oeuvres, delicate first courses, fried or batter dishes.
Bold but interesting combination with pizza. For its simple versatility it is also excellent throughout the meal.

Dedicated to the Via Francigena, an ancient route that from Canterbury, in England, led to Rome and the coasts of southern Italy to then reach the Holy Land. The route included the passage through the same sunny hills on which Cellagrande is located today.
