  • VINIFICATION: Manual harvesting of grapes in boxes, short maceration of the grapes for about 6 hours. Soft pressing with selection of the musts, cold decanting to clarify the musts followed by fermentation in temperature-controlled steel tanks with selected yeasts
  • AGING: 6 months in steel vats with some batonnage, second fermentation in May; sur lattes 36 months
